Broccoli Cornbread

Ingredients

1 bag frozen broccoli
1 box Jiffy corn muffin mix
2 eggs
1 stick salted butter
1 container (16 oz) cottage cheese
- salt and fresh ground black pepper

Steps

  1. Preheat oven to 325 F.
  2. Butter a 9x13 casserole dish (or non-stick spray).
  3. In a mixing bowl, mix all indredients. Spread mixture evenly in dish.
  4. Cook in oven at 325 degrees for 30 min
