Deviled Eggs

Serves: 24 eggs

Ingredients

12 eggs
1/4 cup mayo
1 tbsp softened butter
2 tsp yellow mustard
2 tsp dijon mustard
2 tsp pickle juice
1 tsp sugar
1/8 tsp salt
1/8 tsp pepper
- paprika or cayenne for sprinkling

Steps

  1. Place eggs in saucepan and cover with water, heat over heigh until water begins to boil.
  2. Boil for 1 min, cover with lid, remove from heat. Allow to sit for 17 min and then drain and transfer to an ice bath for 5 min.
  3. Peel eggs and slice in half lengthwise.
  4. Remove yolks to a mixing bowl and mash well with a fork.
  5. Add mayo, butter, mustards, pickle juice, sugar, salt and pepper. Mix well
  6. Spoon or pipe filling into eggs, sprinkle paprika or cayenne on top.
