Mashed Potatoes

Serves: 4-6

Ingredients

2.5 lbs Yukon Gold Potatoes
1 clove Minced Garlic
3 tbsp Salted Butter
1/2 cup whole milk
2 oz cream cheese

Steps

  1. Peel and cut potatoes into evenly sized chunks, about an inch or so thick. Transfer to a large stockpot full of cold water. Water line should be about 1" above potatoes.
  2. Stir garlic and 1 tbsp sea salt into the water.
  3. Turn stove heat on high and cook until water comes to a boil.
  4. Reduce heat to medium high and continue cooking for 10-12 min. Drain water.
  5. As potatoes are boiling, heat butter, milk and 2 tsp sea salt in small saucepan or microwave until butter is just melted, set aside.
  6. After draining water, return the potatoes to hot stockpot and put back on the burner with heat on low. Cook 1 min to help cook off some remaining steam, then remove from burner.
  7. Mash potatoes using masher or fork, then stir in half of melted butter mixture with wooden spoon or spatula, repeat with other half of mixture.
  8. Stir in cream cheese, be careful not to overmix.
  9. Season with additional salt and pepper if desired,
