Mashed Potatoes

Ingredients
| 2.5 lbs |
Yukon Gold Potatoes |
| 1 clove |
Minced Garlic |
| 3 tbsp |
Salted Butter |
| 1/2 cup |
whole milk |
| 2 oz |
cream cheese |
Steps
- Peel and cut potatoes into evenly sized chunks, about an inch
or so thick. Transfer to a large stockpot full of cold water.
Water line should be about 1" above potatoes.
- Stir garlic and 1 tbsp sea salt into the water.
- Turn stove heat on high and cook until water comes to a boil.
- Reduce heat to medium high and continue cooking for 10-12 min. Drain water.
- As potatoes are boiling, heat butter, milk and 2 tsp sea salt in
small saucepan or microwave until butter is just melted, set aside.
- After draining water, return the potatoes to hot stockpot and put back
on the burner with heat on low. Cook 1 min to help cook off
some remaining steam, then remove from burner.
- Mash potatoes using masher or fork, then stir in half of melted butter
mixture with wooden spoon or spatula, repeat with other half of mixture.
- Stir in cream cheese, be careful not to overmix.
- Season with additional salt and pepper if desired,
