Spaghetti Carbonara

Ingredients

8 oz spaghetti
2 large eggs
1/2 cup freshly grated parmesan cheese
4 slices bacon
4 cloves minced garlic
- salt and fresh ground black pepper
2 tbsp fresh chopped parsley

Steps

  1. In large pot of boiling salted water, cook pasta according to package instructions. Reserve 1/2 cup of water and drain well.
  2. In a small bowl, whisk together eggs and parmesan, set aside.
  3. Heat a large skillet over medium high heat, cook bacon about 6-8 min. Leave excess fat in skillet, remove bacon to paper towels.
  4. Mince bacon into small pieces.
  5. Put bacon back into skillet on medium heat, add minced garlic, cook 1 min.
  6. Working quickly stir in pasta and egg mixture into bacon and garlic pan, gently toss to combine. Add reserved pasta water 1 tbsp at a time until desired sauce consistency is reached.
  7. Season with salt and pepper to taste, garnish top with parsley.
