Sweet Potato Casserole

Ingredients

6 sweet potatoes
1/2 tsp salt
1/2 cup sugar
2 eggs, beaten
1 tsp vanilla
1/2 tsp cinnamon
1/2 cup milk

Topping
1 cup brown sugar
1 cup chopped pecans
1/2 stick butter

Steps

  1. Boil whole sweet potatoes for 30 min or until soft. Check with fork for softness.
  2. Peel potatoes and mash in a mixing bowl.
  3. Combine salt, eggs, vanilla, cinnamon and milk with mashed potatoes in mixing bowl. Spread mixture in buttered 9x13 casserole dish.
  4. Preheat oven to 350 F.
  5. Melt 1/2 stick butter in microwave, combine with chopped pecans and brown sugar. Mix until crumbly, spread on top of sweet potato mixture.
  6. Cook in oven at 350 F for 25-30 min.
